Heart Notes Blend is a combination of selected varieties at different stages of ripeness. The olives are hand-picked for maximum protection, each variety individually at the right time and stage of ripeness, only in the early morning hours, when the weather is still cool, and are taken to the oil mill for production. Within six hours of harvest, the oil will have been extracted, filtered and transferred to stainless steel tanks, stored at a temperature of 12-15 degrees Celsius and waiting until the preparation of the remaining oils suitable for the blend is completed, which we will prepare precisely, combining the correct percentages according to each variety with its characteristic aromas and flavors.

We use techniques and processes based on the principles of sustainable agriculture. Thanks to the knowledge, experience and commitment we invest in the production process, our vineyards are characterized by an exceptional quality of aromas, flavors and irreplaceable health benefits.

Our flagship blend perfectly balances bitterness, sweetness and pungency and takes us on a sensory journey of aromas and flavors like a bundle composed of green leafy branches, herbs, fruits and flowers. This combination creates a pleasant finish and an aftertaste that is difficult to ignore. It is a perfect pleasure that gives dishes multi-layered culinary sensations.

Heart Notes Blend is characterized by an extremely low acidity, up to 0.3% and is rich in polyphenols – antioxidants. Due to the unique process, the blend is produced in limited quantities.

To protect this exceptional olive oil, we place it safely in a luxurious black handmade case with our gold logo printed on the cover.

Store at room temperature in a dark cupboard. Under the right conditions, this high-quality oil will keep for about two years.

Aroma: Notes of freshly cut grass, tomato, green olive, with hints of citrus, thyme, mint, tomato and a pinch of unripe walnut.

Taste: Sweet, bitter and spicy on the palate with medium intensity. Ripe notes of fresh fruit. Shades of artichoke, tomato, apple and green banana can be discerned; and wildflowers such as fennel, mint and blackberry.
